College Hack: Mug Meals

As their name implies, mug meals are small meals that can be made with only a few ingredients, a mug, and a microwave. Perfect for the college student on the go, these treats can satisfy a sweet tooth or even serve as a quick meal. Below are a few of my favorite recipes to try next time you are hungry but don’t have long time to spend in the kitchen.

Ingredients:
– Cooking spray or butter
– 2 eggs (I used only egg whites)
– 1 Tbsp milk or water
– Salt and pepper to taste
Other ingredients like cheese, spinach, peppers, etc. can be added as well. Microwave for 30 seconds, then stir until the eggs are fluffly and cooked thoroughly.

Peanut Butter and Banana Mug Cake thumbnail_french toast
Ingredients
– ½ medium banana, mashed
– 1 tablespoon peanut butter (or any other nut butter)
– 1 egg white
– ¼ teaspoon vanilla extract
– 4 ½ Tbsp flour
– ¼ teaspoon cinnamon
– ¼ teaspoon baking powder
– pinch of salt
Microwave for 45-60 seconds, or until the middle is firm.

Chocolate Mug Cake  thumbnail_chocolate cake
Ingredients
– 1/4 cup all-purpose flour
– 2 Tbsp unsweetened cocoa powder
– 1/4 teaspoon baking powder
– 2 Tbsp granulated sugar (you can add 1 Tbsp more if you like it a bit sweeter)
– 1/8 teaspoon salt
– 1/4 cup + 1 Tbsp milk
– 2 Tbsp vegetable oil
– 1 Tbsp hazelnut chocolate spread
Microwave for about 70 seconds, or until the cake is cooked thoroughly.

French Toast in a Mug thumbnail_Banana cake
Ingredients
2 slices bread, cut into 1/2-inch cubes
1/4 cup milk
1 egg
1/2 teaspoon vanilla extract
1 Tbsp sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
Microwave for about 90 seconds.
